Instant Pot Garlic Smashed Cauliflower

This creamy smashed cauliflower is delicious and easy. I hope your family loves it just as much as mine does!

 1 Cauliflower
 4 oz Cream Cheese
 2 tbsp Butter
 4 tsp Dried Parmesan
 1 tsp Garlic Powder
 1 tsp Butter Salt
 ½ tsp Salt
 Pepper to Taste
Cooking the Cauliflower
  • Core the cauliflower and slice it into quarter inch slices. No need to be neat or precise with this. Then place in your instant pot using the strainer. Use the steam function or just high pressure and cook for 3 minutes. Do an immediate release when the time has completed. Place half of the cauliflower in your food processor and then pull the strainer with the other half out of the instant pot or spread out on a plate or large bowl. The purpose of this is the let as much steam escape as possible to dry.
Directions
  1. While the cauliflower is cooking, cube the cream cheese and butter in a bowl or plate.
  2. Measure out the garlic powder, butter salt and salt & pepper into a small bowl.
  3. Measure out the parmesan cheese into a small bowl.
  4. When you have placed half of the cauliflower into the food processor and it has cooled a little, you can add all of the above ingredients to the food processor.
  5. Add the remaining cauliflower that has cooled a little to the food processor.
  6. Process the cauliflower until it is smooth and creamy.
  7. Taste and season as needed.
  8. Place the mixture into a container and let cool a little more until there is no longer any steam. Cover and place into the refrigerator.
  • This is really better heated up the next day. Some water will accumulate on top so pour or scoop it off before reheating.
Notes
  • This recipe uses an Instant Pot to cook the cauliflower. You can also steam or boil your cauliflower but I have found the instant pot is the best choice for me.
    You can also just use plain salt but just the single teaspoon.
    You can also substitute seasoned salt or other flavored salt such as bacon, smoked, truffle etc.
    You can also use fresh garlic but double the amount and you may want to quickly saute it first!
